CAUCA Colombia

The volcanic soil of southwestern Colombia's mountainous Cauca region is renowned for producing consistently well balanced coffees. Low daytime and nighttime temperatures in these high altitudes slow the ripening of the coffee cherries, allowing the beans to absorb more sugars before the harvest. The result is a distinctly sweet cup, as showcased in this lovely coffee from some of Cauca's finest smallholder farms.
